
Ingredients –
- 1 bunch babori Xaak (crown daisy), finely chopped
- 2 duck eggs, beaten
- 1 medium onion, finely chopped
- 2-3 cloves of garlic, finely chopped
- 2 green chillies, finely chopped
- 1/2 tsp turmeric powder
- Salt to taste
- 2 tbsp mustard oil
Method –
- Heat oil in a pan
- Add garlic, sauté for 10 seconds
- Add onions and sauté till translucent
- Now, add the chopped babori Xaak and green chillies
- Add turmeric powder and salt
- Mix well and stir fry for 2-3 minutes
- Add beaten eggs
- Mix well to combine.
- Stir again for 2-3 minutes
- Remove from heat
- Serve with steamed rice as a side dish
