Chirer Pulao (Flattened Rice Pulao)


  • 1.5 cups chire (flattened rice)
  • 1 medium sized boiled potato
  • 1 tbsp oil
  • 1/4 tsp cumin seeds
  • 1/4 tsp fennel seeds
  • 1 tbsp peanuts
  • 1 tbsp cashew nuts
  • 1 tsp raisins
  • 1 medium sized onion, chopped finely
  • Salt to taste
  • 1/4 tsp turmeric powder
  • 2 tbsp sugar
  • 1 tbsp ghee


  1. Wash the flattened rice thoroughly and drain in a colander
  2. Dice the potatoes into small cubes
  3. Heat 1 tbsp oil in a pan
  4. Add cumin seeds and fennel seeds
  5. Sauté for a few seconds
  6. Add the peanuts and fry on high flame for 1 minute
  7. Add cashew nuts and raisins and sauté for 30 seconds
  8. Add boiled potatoes and fry on high flame for 2 minutes
  9. Add onion and fry for 2 minutes on high flame
  10. Add turmeric powder, salt and fry on high flame for 2 minutes
  11. Now, add sugar, sprinkle some water and fry on high heat for 1 minute
  12. Add the flattened rice. Stir and mix for 2-3 minutes
  13. Switch off the flame
  14. Add ghee, mix well
  15. Cover the pan and let it rest for 5 minutes before serving
