Masala French Toast

Ingredients

  • 2 eggs
  • 3 tbsp milk
  • 1 tbsp finely chopped tomato
  • 1 tbsp finely chopped onion
  • 1 tbsp finely chopped coriander leaves
  • 1 finely chopped green chilli
  • 3 slices of bread
  • 1/4 tsp red chilli flakes
  • 1/4 tsp each of ginger and garlic powder
  • Salt and pepper to taste

Method –

  1. Whisk the eggs in a shallow bowl
  2. Add salt, pepper, ginger garlic powder and chilli flakes to the mixture and beat well
  3. Add the onions, coriander leaves and tomatoes and milk and mix well
  4. Heat oil in a pan
  5. Dip the bread slices in the mixture and fry them on medium heat for about 2 minutes on each side

Lemon Loaf

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 tsp vanilla extract
  • 1 tsp lemon extract (optional)
  • Zest of 1 large lemon
  • 2 tbsp lemon juice
  • 1/3 cup buttermilk
  • Icing sugar for sprinkling the top of cake

Method –

  1. Preheat the oven to 180°C
  2. Grease and flour an 8” X 4” loaf pan and line with parchment paper
  3. In a mixing bowl, sieve together the flour, baking powder, baking soda and salt
  4. In a separate bowl, beat together the butter and sugar until fluffy
  5. Mix in the eggs one at a time
  6. Mix in the vanilla extract, lemon extract, lemon zest and lemon juice
  7. Fold in the flour alternately with buttermilk in batches
  8. Pour the mixture into the prepared pan and bake for about 40 minutes
  9. Once it is cool, dust the top with icing sugar
