

Ingredients –
- 1 1/2 cups all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 tsp vanilla extract
- 1 tsp lemon extract (optional)
- Zest of 1 large lemon
- 2 tbsp lemon juice
- 1/3 cup buttermilk
- Icing sugar for sprinkling the top of cake
Method –
- Preheat the oven to 180°C
- Grease and flour an 8” X 4” loaf pan and line with parchment paper
- In a mixing bowl, sieve together the flour, baking powder, baking soda and salt
- In a separate bowl, beat together the butter and sugar until fluffy
- Mix in the eggs one at a time
- Mix in the vanilla extract, lemon extract, lemon zest and lemon juice
- Fold in the flour alternately with buttermilk in batches
- Pour the mixture into the prepared pan and bake for about 40 minutes
- Once it is cool, dust the top with icing sugar
